Delight your loved ones with juicy ginger-glazed pork cutlets alongside flavorful fried rice.
Ingredients:
  • 125ml sambal oelek
  • 80ml soy sauce
  • 36.60 gm fish sauce
  • 15g (about 4cm) fresh ginger, peeled
  • 4 x 250g pork forequarter cutlets
  • 46.00 gm canola oil, divided
  • 3 free range eggs, lightly whisked
  • 350g chinese cabbage
  • 1 carrot, peeled, cut into matchsticks
  • 2 spring onions, thinly sliced into rounds,
  • 1 spring onion, thinly sliced diagonally
  • 600.00 gm cooked jasmine rice, cooled
  • 12.00 gm white sesame seeds, toasted
Instructions:
  • Combine chilli-garlic sauce, soy sauce, and fish sauce in a medium bowl. Grate ginger into the sauce using a rasp grater and mix well. Reserve 1/4 cup (60ml) of the sauce in a resealable plastic bag, add pork, and marinate in the refrigerator for 4-24 hours.
  • Preheat a chargrill over medium-high heat. Take the pork out of the marinade and dry it off. Season with salt. Grill the pork, flipping it once, for 5 mins until nicely browned and the internal temperature reaches 60C. Brush with 1/4 cup (60ml) of the sauce and let it rest.
  • Heat a heavy wok or large heavy frying pan over medium-high heat with 1/2 tablespoon of oil. Add the eggs and stir quickly for 30 seconds until just cooked but still moist. Transfer to a plate.
  • Heat the wok over high heat and pour in the remaining 2 tablespoons of oil. Once you see a wisp of smoke, toss in the wombok, carrots, and 2 of the spring onions. Stir-fry for 2 minutes until the veggies are crisp-tender. Mix in the rice and stir-fry for 1 minute. Pour in the remaining sauce and cook for an additional minute until the rice is hot. Gently fold in the eggs and season with salt, if desired.
  • Divide the delicious fried rice evenly among 4 plates. Place the flavorful pork cutlets on top, sprinkle with sesame seeds and the rest of the spring onion, and enjoy your beautiful meal.
