Honey, soy and ginger glazed pork ribs

Succulent soy-glazed pork ribs, perfect for stress-free hosting.
Ingredients:
  • 5cm piece ginger, grated
  • 6 garlic cloves, finely chopped
  • 125ml soy sauce
  • 175g honey
  • 125ml mirin
  • 22.00 gm sweet chilli sauce
  • 1.4kg pork ribs, cut into individual ribs
  • Coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • In a large zip-lock bag, mingle ginger, garlic, soy sauce, honey, rice wine, and sweet chili sauce. Add the ribs, seal the bag, and shake well to fully coat the pork. Refrigerate for at least 1 hour or overnight to marinate.
  • Preheat your oven to 180C. Take the ribs out of the bag, saving the marinade, and place them on a rack over a roasting pan with 1cm of water. Roast for 35-40 minutes until they are caramelised and golden. Set the pork aside with foil covering while you prepare the glaze.
  • To make the glaze, combine the marinade and juices from the roasting pan in a small saucepan. Simmer over medium-high heat until the mixture becomes sticky, about 4-5 minutes. Be vigilant to prevent burning. Brush the glaze over the ribs.
  • Garnish the hot ribs with fresh cilantro and lime wedges.
