Create a flavorful hoisin chicken stir-fry with simple fresh ingredients and pantry staples.
Ingredients:
  • 400g Chicken Breasts, thinly sliced widthwise
  • 80ml (1/3 cup) hoisin sauce (see note)
  • 80ml (1/3 cup) peanut oil
  • 2 cloves garlic, thinly sliced
  • 3cm piece ginger, cut into julienne (matchsticks)
  • 1 red onion, cut into wedges
  • 100g green beans, trimmed, sliced on the diagonal
  • 1 bunch baby pak choy, trimmed, roughly chopped
  • 1 small red capsicum, seeded, thinly sliced
  • 1 small yellow capsicum, seeded, thinly sliced
  • 2 spring onions, thinly sliced on the diagonal
  • Steamed white long-grain rice, to serve
Instructions:
  • In a large bowl, combine chicken with 2 tablespoons of flavorful hoisin sauce. Season with salt and pepper, toss to coat, and let sit at room temperature for 15 minutes to marinate.
  • In a large wok over high heat, heat up 2 tablespoons of oil. Stir-fry the chicken until golden, about 4 minutes. Transfer the chicken to a plate and wipe the wok clean with a paper towel.
  • Place the wok back on high heat and pour in the remaining 2 tablespoons of oil. Toss in the garlic and ginger, stir-frying for 2 minutes until the garlic turns light golden. Add the red onion, beans, pak choy, red and yellow capsicums, and stir-fry for another 2 minutes. Add back the chicken, spring onions, remaining 2 tablespoons of hoisin sauce, and 2 tablespoons of water. Stir-fry for an additional 3 minutes until the chicken is fully cooked and the vegetables are tender. Season to taste before serving.
  • Serve the stir-fry in individual bowls alongside steamed rice.
