Master the art of stir-frying: heat, sizzle, shake, stir for a flavorful Asian dish.
Ingredients:
  • 85g (1/2 cup) whole blanched almonds
  • 45.50 gm peanut oil
  • 1/2 bunch bok choy, washed, cut into 8cm lengths
  • 1 bunch choy sum, washed, cut into 8cm lengths
  • 1 bunch Chinese broccoli, washed, cut into 8cm lengths
  • 10.60 gm soy sauce
  • 1 brown onion, halved, cut into thin wedges
  • 1 garlic clove, crushed
  • 3 (about 550g) chicken breast fillets, trimmed, thinly sliced across the grain
  • 43.20 gm hoisin sauce
  • Cooked jasmine rice, to serve
Instructions:
  • Heat a wok over medium heat. Stir almonds for 1-2 minutes until golden. Transfer to a bowl and set aside.
  • In a wok, warm 2 teaspoons of oil over medium heat. Stir-fry the bok choy, choy sum, and broccoli stems for 1 minute. Then, add the leaves and continue stir-frying until just wilted. Finish by adding soy sauce. Transfer the stir-fry to a bowl and cover with foil to keep warm. Enjoy!
  • In a hot wok, sizzle 1 tablespoon of oil. Toss in the onion and sauté until slightly tender. Add garlic and cook until fragrant. Transfer to a bowl. Pour 2 teaspoons of oil into the wok, add half the chicken, sear until browned and cooked. Place in the bowl. Repeat with remaining oil and chicken. Put everything back in the wok, pour hoisin sauce, stir-fry until well combined and heated through.
  • Arrange the Asian greens on plates, layer with the flavorful hoisin chicken, sprinkle generously with almonds, and serve promptly alongside steamed rice.
