Ingredients:
  • Hot Cooked Rice
  • 1 tablespoon vegetable oil
  • 1 cup sliced mushrooms (3 ounces)
  • 1 cup bean sprouts, rinsed and drained
  • 2 medium green onions, sliced (2 tablespoons)
  • 3 tablespoons soy sauce
  • Dash of pepper
Instructions:
  • Prepare a steaming pot of cooked rice.
  • Heat 1 tablespoon of oil in a 10-inch skillet over medium heat for 1 to 2 minutes. Add mushrooms and cook for about 1 minute, stirring frequently until evenly coated with oil.
  • Combine bean sprouts, onions, and rice with mushrooms in a sizzling wok. Stir-fry diligently until piping hot, then promptly take off the heat.
  • In a small bowl, lightly beat eggs with a fork. Push the rice to one side of the skillet. Add 1 tablespoon of oil to the empty space and pour the beaten eggs into it. Stir constantly over medium heat until eggs are cooked but still soft.
  • Combine eggs and rice mixture, then mix in the soy sauce and pepper until well incorporated.
