Make delicious fried rice with the kids in a few simple steps!
Ingredients:
  • 200.00 gm white long-grain rice
  • 18.40 gm vegetable oil
  • 2 eggs, lightly beaten
  • 1 small brown onion, finely chopped
  • 2 middle bacon rashers, trimmed, chopped
  • 1 garlic clove, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 1 medium carrot, peeled, chopped
  • 250.00 ml frozen peas
  • 1 small red capsicum, chopped
Instructions:
  • Once the rice is cooked to perfection following the packet instructions, transfer it to a tray and gently spread it out. Cover the tray with paper towel and let it chill in the refrigerator for 2 hours, or until thoroughly cold.
  • Heat a wok over medium heat and add half of the oil, swirling to coat. Pour in half of the egg and swirl for 1 minute to coat. Transfer the egg to a board, roll it up, and thinly slice. Repeat with the remaining egg and cover to keep warm.
  • Pour the rest of the oil into the wok and swirl to ensure it coats the surface. Add the diced onion and bacon, stir-fry for 3 minutes until the onion softens and the bacon turns crisp. Incorporate the garlic, ginger, carrot, peas, and capsicum. Stir-fry for another 3 minutes until the vegetables are tender.
  • Stir-fry the rice until heated through for 3 minutes, then add soy sauce and continue to stir-fry for an additional minute. Top with egg and serve alongside Honey-soy chicken.
