Delicious fried rice cakes - ideal pairing for chicken stir-fry or sticky Asian ribs.
Ingredients:
  • 200.00 gm jasmine rice
  • 50g shaved double-smoked leg ham, finely chopped
  • 82.50 ml frozen peas
  • 1 small red capsicum, finely chopped
  • 40.00 ml finely chopped fresh chives
  • 10.60 gm salt-reduced soy sauce
  • 40.00 ml plain flour
  • 36.80 gm vegetable oil
  • Extra finely chopped fresh chives, to serve
Instructions:
  • Prepare the rice according to the absorption method on the packet. Once cooked, place it in a heatproof bowl and allow it to cool for 15 minutes.
  • Combine ham, peas, capsicum, chives, soy sauce, egg, flour, salt, and pepper with rice. Mix well. Shape 1/3 cup of the mixture into a patty using damp hands. Repeat to make a total of 8 patties. Place on a tray lined with baking paper and refrigerate for 30 minutes until firm.
  • In a large frying pan over medium-high heat, heat the oil. Cook the patties for 2 to 3 minutes on each side until golden. Then, transfer them to a plate lined with paper towel to drain. Serve them sprinkled with extra chives.
