Indulge in a decadent berry fool, a harmonious blend of luxurious cream and tangy fruit. Swap in ripe, diced peaches for a delicious twist.
Ingredients:
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries, broken in half
  • 1 cup fresh strawberries, hulled and quartered
  • 1 teaspoon lemon zest
  • 1 teaspoon freshly squeezed lemon juice
  • 0.25 cup white sugar
  • 1 cup chilled heavy cream
  • 0.25 cup creme fraiche
  • 1 tablespoon white sugar
  • 0.25 teaspoon pure vanilla extract
  • 1 cup crushed shortbread cookies
Instructions:
  • Combine raspberries, blackberries, and strawberries in a bowl. Mix in lemon zest, lemon juice, and 1/4 cup of sugar until fruits are coated and juices start to develop. Chill in the refrigerator, covered, for about 1 hour before serving.
  • In a chilled bowl, combine heavy cream and creme fraiche. Mix in 1 tablespoon of sugar and vanilla extract. Whisk until soft peaks with sharp lines form, approximately 5 to 8 minutes.
  • Begin by creating a base of cookie crumbs in each serving dish, followed by a layer of fruit and a dollop of whipped cream. Continue layering in the same order, finishing with a final sprinkle of cookie crumbs on top.
