Fresh Garden Tomato Sauce

Make Chef John's fresh tomato sauce at home for a tasty upgrade from store-bought.
Ingredients:
  • 3 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • 8 leaves fresh basil
  • 5 pounds vine-ripened tomatoes, seeded and quartered
  • 1 teaspoon kosher salt, or to taste
  • 0.125 teaspoon red pepper flakes
Instructions:
  • In a saucepan over medium heat, warm olive oil and sauté sliced garlic for 30 seconds. Add basil leaves and sizzle until garlic just starts to turn golden. Stir in tomatoes, salt, and red pepper flakes, then increase heat to medium-high.
  • Simmer the mixture until the tomatoes have fully collapsed and turned into a luscious liquid, then turn off the heat. Stir occasionally.
  • Strain the sauce through a strainer or colander into another pot, using the back of a ladle or spatula to press everything through, discarding the skins and seeds left in the colander.
  • Return the strained sauce to medium heat and simmer until reduced to about 5 cups, or until thickened to your liking. Season to taste and use right away, or store in an airtight container for later use.
