Fresh Tomato Chili Sauce

Easily make a flavorful chili tomato sauce with fresh garden ingredients and zesty lime juice.
Ingredients:
  • 35 fresh tomatoes, peeled, seeded and chopped
  • 2 cups apple cider vinegar
  • 4 red bell peppers, seeded and diced
  • 1 large onion, diced
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 3 fresh hot chile peppers, seeded and chopped
  • 0.33333334326744 cup fresh lime juice, or amount to taste
  • 1 tablespoon salt, or amount to taste
Instructions:
  • In a large pot over medium heat, gently simmer tomatoes for 1 hour, removing any excess liquid or foam as needed.
  • Combine vinegar, bell peppers, onion, both sugars, chile peppers, lime juice, and salt in the pot. Simmer on low heat for 3 to 5 hours until the sauce thickens. Taste and adjust seasonings as needed.
  • Check 4 1-quart jars for cracks and rust on rings, and discard any damaged ones. Place them in simmering water while preparing the sauce. Wash new lids and rings in warm soapy water.
  • After removing sauce from heat, discard any foam. Fill hot, sterilized jars, leaving 1/4 inch space from the top. Remove air bubbles by running a knife along the sides. Wipe rims clean with a damp paper towel. Seal with lids and screw tightly.
  • 1. Fill a large stockpot halfway with water and place a rack on the bottom. 2. Bring the water to a boil. 3. Using a jar holder, lower the jars into the boiling water, ensuring they are 2 inches apart. 4. Pour more boiling water into the pot to cover the jars by at least 1 inch. 5. Cover the pot, bring it back to a rolling boil, and process for 10 minutes.
  • Remove the jars from the stockpot and allow them to cool for 12 to 24 hours, ensuring they are a few inches apart. Press the center of each lid gently to check if it's sealed properly. Once cooled, remove the rings and store the jars in a cool, dark place.
