Mussels in chilli tomato sauce

Spicy tomato sauce highlights fresh mussels. Serve with crusty bread for a delectable meal.
Ingredients:
  • 36.40 gm Classic Olive Oil
  • 2 small red chillies, deseeded, finely chopped
  • 22.20 gm Tomato Paste
  • 1kg tomatoes, finely chopped
  • 1 lemon, rind finely grated, juiced
  • 10.00 gm caster sugar
  • 125.00 gm dry white wine
  • 1.5kg mussels, beards removed (see note)
  • 125.00 ml flat-leaf parsley leaves, roughly chopped
  • Crusty bread, to serve
  • Salt and pepper, to season
Instructions:
  • Warm oil in a large, deep saucepan over medium heat. Sauté onion, garlic, and chilli for 3 minutes until onion is soft. Stir in tomato paste and cook for 1 more minute.
  • Combine tomato, lemon rind, lemon juice, sugar, and wine in a pan. Stir until mixed well. Increase heat to high and bring sauce to a boil. Reduce heat to medium and simmer uncovered for 8 to 10 minutes until thickened. Season with salt and pepper to taste.
  • Place mussels in sauce, cover, and cook for 3 to 5 minutes until shells open. Remove any unopened shells. Serve in bowls, sprinkle with parsley, and enjoy with bread.
