Mussels in spicy Thai broth

Try a flavorful Thai-inspired mussels dish for a speedy mid-week dinner ready in just 30 minutes.
Ingredients:
  • 2 tsp sesame oil
  • 2 red chillies, deseeded, finely chopped
  • 2 sticks lemon grass, white part chopped
  • 4 makrut lime leaves, shredded
  • 375ml chicken style liquid stock (see Notes)
  • 252.50 gm light coconut milk
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 1 lime, juiced
  • 1.5kg black mussels, cleaned, beards removed
  • 4 green onions, thinly sliced, to serve
  • 125.00 ml coriander leaves, to serve
Instructions:
  • In a saucepan over medium-high heat, warm oil. Toss in garlic, chillies, lemon grass, and lime leaves. Sauté for 1 minute. Pour in stock, coconut milk, fish sauce, sugar, and lime juice. Let it simmer for 10 minutes.
  • Place the mussels in a saucepan, cover, and cook for 2 to 3 minutes until they open. Remove any mussels that remain closed before serving.
  • Divide mussels and broth among bowls. Garnish with onions and fresh coriander. Enjoy!
