Spicy seafood linguine with shrimp, scallops, and mussels in zesty tomato sauce with red pepper flakes.
Ingredients:
  • 6 cloves garlic, crushed
  • 4 tablespoons olive oil, divided
  • 6 cups canned whole tomatoes with juice, chopped
  • 2 teaspoons red pepper flakes
  • 2 teaspoons chopped fresh oregano
  • 2 teaspoons chopped fresh basil
  • 1.5 teaspoons salt
  • 1 (16 ounce) package linguine
  • 0.5 pound small shrimp, peeled and deveined
  • 0.5 pound bay scallops
  • 0.5 pound mussels, cleaned and debearded
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large saucepan over medium heat, sizzle crushed garlic in 2 tablespoons of oil until fragrant, about 1 to 2 minutes. Add in tomatoes with juice, red pepper flakes, oregano, basil, and salt. Bring to a boil, then let it simmer on low heat for 30 minutes, stirring occasionally.
  • While you wait, boil a large pot of lightly salted water. Cook the linguine until al dente, for about 11 minutes. Drain and set aside to keep warm.
  • Heat 2 tablespoons of olive oil in a large skillet over high heat. Add shrimp and scallops, cooking and stirring until the shrimp turn pink, about 2 minutes. Remove from heat.
  • Combine the shrimp, scallops, mussels, and parsley with the tomato mixture; simmer until the sauce bubbles and mussels open, approximately 7 minutes. Drizzle the sauce over the linguine and enjoy your meal.
