Spicy chicken thighs in a delicious fra diavolo sauce with herbs, white wine, and a kick of heat. Perfect with crusty bread to soak up every bit of flavor!
Ingredients:
  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 Tablespoon olive oil
  • 1 Tablespoon unsalted butter
  • 1 small onion, chopped
  • 1 hot red pepper, chopped, see note
  • 4 cloves garlic, minced
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon crushed red pepper flakes, or to taste
  • 1/2 cup white wine, such as Pinot Grigio
  • 1 Tablespoon tomato paste
  • 1 14.5-ounce can crushed fire-roasted tomatoes
  • 1 Tablespoon minced fresh basil, plus more for optional garnish
  • 1 Tablespoon minced fresh parsley
  • Shredded Parmesan cheese, to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Dry the chicken thighs thoroughly using paper towels, then remove any excess skin and fat. Season both sides of each chicken thigh with salt and pepper.
  • Heat a combination of olive oil and butter in a sizable oven-safe skillet over medium heat.
  • Once the butter is bubbling, gently place the chicken thighs in the skillet in batches, ensuring they have enough room to brown nicely, about 3 to 5 minutes per side. Once all the thighs are browned, transfer them to a plate to keep warm.
  • In the same skillet, sauté chopped onions and hot red pepper until onions start to soften, around 3 minutes. Stir in garlic, Italian seasoning, and crushed red pepper flakes, and cook until garlic is aromatic, about 30 seconds.
  • Pour in the wine followed by the tomato paste and cook for about 3 minutes. Mix in the crushed tomatoes and minced basil, then simmer until the sauce thickens slightly for about 5 minutes. Gently place the browned chicken thighs, skin side up, into the sauce along with any juices.
  • Bake chicken thighs in the skillet in the oven until they reach an internal temperature of at least 165 degrees F (74 degrees C as measured by an instant-read thermometer inserted near the center.
  • Finish off the dish with a generous sprinkle of minced fresh parsley and additional basil leaves for extra flavor. Add shredded Parmesan cheese to suit your taste preferences. Serve the dish warm and enjoy!
