Spicy garlic and tomato Diavolo sauce pairs perfectly with shellfish over hot linguine for an exquisite Italian dish.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 6 cloves garlic, crushed
  • 3 cups whole peeled tomatoes with liquid, chopped
  • 1.5 teaspoons salt
  • 1 teaspoon crushed red pepper flakes
  • 1 (16 ounce) package linguine pasta
  • 8 ounces small shrimp, peeled and deveined
  • 8 ounces bay scallops
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large saucepan over medium heat, sauté minced garlic in 2 tablespoons of olive oil until fragrant. Add in tomatoes, salt, and red pepper flakes. Simmer gently for 30 minutes, stirring occasionally, until flavors meld.
  • While eagerly waiting, prepare a large pot of delicately salted water until it reaches a rolling boil. Cook the pasta for 8 to 10 minutes or until perfectly al dente; drain it.
  • In a large skillet over high heat, sizzle shrimp and scallops in 2 tablespoons of olive oil until shrimp turn pink, around 2 minutes. Mix in parsley and tomato sauce, let it simmer until bubbles form, for about 3 to 4 minutes. Serve hot over pasta.
