Spicy tuna pasta in fra diavolo sauce - a flavorful weeknight dinner ready in 30 minutes!
Ingredients:
  • 0.25 cup olive oil
  • 6 cloves garlic, thinly sliced
  • 1 (28 ounce) can whole Italian plum tomatoes (such as San Marzano)
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon salt, or to taste
  • 1 pound gemelli pasta
  • 6 (4 ounce) tuna steaks
  • 0.25 cup freshly chopped parsley
  • 2 tablespoons heavy cream
  • 8 leaves basil chiffonade (thinly sliced fresh basil leaves), divided
Instructions:
  • 1. Heat a heavy skillet over medium heat until the oil shimmers. Quickly cook garlic for about 1 minute, ensuring it doesn't burn. Transfer garlic slices to a paper towel-lined plate. Set aside.
  • In the same skillet, combine tomatoes, red pepper flakes, and salt. Stir to crush tomatoes with a wooden spoon. Cover and cook for 5 minutes.
  • In a large pot of salted boiling water, cook the pasta until al dente, about 8 minutes. Drain and set aside.
  • Uncover the sauce and gently stir in the tuna steaks. Cover and simmer until the tuna is easy to flake with a fork, about 8 to 10 minutes. Stir in half of the fried garlic, parsley, cream, and half of the basil.
  • When ready to plate, portion the pasta into bowls and generously spoon over the savory tuna sauce. Finish by sprinkling the remaining fresh basil chiffonade and crispy fried garlic for an extra burst of flavor. Serve promptly to enjoy at its best.
