Chilli tuna and artichoke pasta bake

Spicy tuna bake with artichokes for extra flavor and nutrients.
Ingredients:
  • 250g dried large pasta shells (San Remo brand)
  • 1 x 340g jar marinated artichokes, drained
  • 2 x 185g cans tuna in chilli oil (Sirena brand), drained
  • 1 x 250g ctn light sour cream
  • 1 x 250g pkt mozzarella, coarsely grated
  • 4 green shallots, ends trimmed, finely chopped
  • 40.00 ml chopped fresh basil leaves
  • Baby spinach leaves, to serve
Instructions:
  • Preheat your oven to 180°C. Arrange six 500ml (2-cup) ovenproof ceramic dishes on 2 baking trays.
  • Cook the pasta in a large saucepan of salted boiling water according to the instructions on the packet until it is al dente. Drain the pasta.
  • In a large bowl, mix together the pasta, artichokes, tuna, sour cream, mozzarella, green shallots, and basil. Season with salt and pepper. Spoon the mixture evenly into ovenproof bowls. Bake in a preheated oven for 15 minutes, rotating the trays halfway through, until golden and heated through. Remove carefully from the oven.
  • Garnish the chili tuna and artichoke pasta bake with fresh spinach leaves before serving.
