Spicy wholemeal pasta topped with seared tuna.
Ingredients:
  • 400g dried wholemeal spaghetti
  • 50.00 ml drained capers
  • 2 fresh long green chillies, deseeded, coarsely chopped
  • 1 x 200g punnet grape tomatoes, halved
  • 2 (about 200g each) tuna steaks
  • 82.50 ml loosely packed fresh basil leaves
  • Salt & freshly ground black pepper
Instructions:
  • In a large saucepan of salted boiling water, cook the pasta following packet directions until al dente. Drain the pasta and return it to the pan. Add 3 teaspoons of oil, capers, chili, and tomato. Cover with a lid to keep warm.
  • Heat the rest of the oil in a spacious non-stick frying pan on high heat. Cook the tuna for 2-3 minutes on each side for medium-rare or to your desired doneness. Place on a plate and let it rest for 2 minutes.
  • Thinly slice the tuna into delicate 5mm-thick pieces. Introduce the slices into the pan with the spaghetti blend. Sprinkle in the fresh basil and lightly mix everything together.
  • Serve the pasta on individual plates, and generously season with salt and pepper.
