Crispy haloumi elevates this healthy tuna salad to delicious heights.
Ingredients:
  • 125g haloumi*, sliced
  • 36.40 gm olive oil
  • 400g canned borlotti beans, rinsed, drained
  • 100g grape tomatoes or cherry tomatoes, halved
  • 625.00 ml firmly packed baby spinach leaves
  • 125.00 ml basil leaves, torn if large
  • 20.00 ml red wine vinegar
  • 2 x 185g cans tuna with chilli, well-drained
Instructions:
  • Pat dry the haloumi with paper towel to remove excess moisture. Heat a generous amount of oil in a hot frypan. Cook the haloumi for 1 minute on each side or until it develops a golden brown crust.
  • In a bowl, mix together the beans, tomatoes, spinach, and basil. Break the fried haloumi into pieces and add it to the bowl. Drizzle with vinegar and the remaining oil, then toss gently to combine. Lastly, break up the drained tuna and sprinkle it over the salad. Enjoy!
