Create show-stopping spicy chili mussels for a taste of summer in every bite.
Ingredients:
  • 36.40 gm olive oil
  • 2 medium brown onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 small red chilli, halved, deseeded, finely chopped
  • 1.5kg (about 12) ripe tomatoes, chopped
  • 375mls (1 1/2 cups) vegetable liquid stock
  • 1kg black (local) mussels, cleaned
  • 125.00 ml shredded fresh basil leaves
  • 10.00 gm caster sugar
  • Salt & ground black pepper, to taste
  • Crusty bread, to serve
Instructions:
  • In a large saucepan over medium heat, sauté the onions, garlic, and chili in olive oil for 3 minutes until the onions are slightly softened.
  • Turn up the heat to medium-high and combine the tomatoes and stock in the pot. Bring the mixture to a boil, then let it simmer without a lid for 20 minutes.
  • Gently place the mussels in the pot, cover, and simmer for 5 minutes until they open up and are cooked through. Remove any mussels that remain closed.
  • Combine the fragrant basil and a touch of sugar, then taste and season generously with salt and pepper. Serve alongside fresh, crusty bread.
