Tomato and mussels pasta

Create a delicious Italian-inspired pasta by combining tomato and mussel mix.
Ingredients:
  • 500g pasta (of your choice)
  • 250.00 ml tomato passata
  • 2 tomatoes, chopped
  • 2 garlic cloves, crushed
  • 1 red chilli, chopped
  • 375g tub mussel meat, drained
  • 62.50 ml parsley, chopped
  • Fresh basil leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Prepare 500g of your favorite pasta by cooking it in a large saucepan of boiling water according to the package directions.
  • In a microwave-safe bowl, mix together 1 cup of tomato passata, 2 chopped tomatoes, 2 crushed garlic cloves, and 1 chopped red chilli. Microwave on high for 2 minutes, stirring halfway through.
  • After draining the pasta well, return it to the pan. Combine the tomato mixture, 375g tub of mussel meat, and 1/4 cup of chopped parsley with the hot pasta, ensuring everything is nicely mixed. Season to taste.
  • Garnish with fresh basil leaves and serve with crusty bread.
