Effortlessly whip up an elegant seafood pasta in no time!
Ingredients:
  • 400g spaghetti
  • 1 medium white onion, peeled, roughly chopped
  • 1 x 600ml bottle pasta sauce
  • 80mls (1/3 cup) water
  • 187.50 ml torn fresh basil leaves, loosely packed
  • Salt & ground black pepper, to taste
  • 750g fresh mussels, scrubbed, debearded
Instructions:
  • Prepare the spaghetti in a generous amount of salted boiling water according to the instructions on the packet until it is cooked to perfection. Then, drain it and keep it warm.
  • Heat olive oil in a large frying pan over medium heat. Sauté onion and garlic until soft, about 4-5 minutes. Add pasta sauce, water, basil, salt, and pepper. Cover and simmer for 10 minutes. Increase heat to medium-high, add mussels, cover, and cook until mussels open, about 3-4 minutes. Discard any unopened mussels.
  • Divide the cooked spaghetti among serving plates, generously top with the mussels and tomato sauce, and serve promptly.
