Elevate spaghetti with a medley of seafood in a tasty marinara sauce.
Ingredients:
  • 36.40 gm olive oil, plus extra to toss
  • 1 onion, finely chopped
  • 250ml white wine
  • 66.60 gm tomato paste
  • 2 x 410g cans crushed tomatoes
  • 500g Cucina Matese Spaghetti
  • 500g marinara mix (see Notes)
  • 300g black mussels, washed, de-bearded
  • 40.00 ml chopped flat-leaf parsley
  • Salt, to season
Instructions:
  • In a large saucepan over medium heat, sauté onion in oil until softened, about 3-4 minutes.
  • Combine the aromatic garlic and flavorful wine in the pan, allowing them to simmer for 2 minutes. Then introduce the paste and crushed tomatoes to the mixture, letting it simmer for an additional 15-20 minutes until it thickens slightly, stirring occasionally. Finally, season generously to enhance the taste.
  • Cook the pasta in boiling, salted water until perfectly tender. Drain and coat lightly with olive oil.
  • Combine the marinara mix and mussels with the tomato sauce, cover, and cook for 3-4 minutes over medium-high heat. Remove any unopened mussels before serving.
  • Add the fresh parsley, mix well, then coat the pasta with the sauce and plate it up.
