Malaysian coconut rice dish with spicy chili sauce, crispy anchovies, peanuts, fresh cucumber or tomato, and boiled egg.
Ingredients:
  • 2 cups water
  • 2 cups coconut milk
  • 2 cups long grain rice, rinsed and drained
  • 1 (1/2 inch) piece fresh ginger, peeled and thinly sliced
  • 0.25 teaspoon ground ginger
  • 1 whole bay leaf
  • salt to taste
  • 1 cup oil for frying
  • 1 cup raw peanuts
  • 1 (4 ounce) package white anchovies, washed
  • 4 large hard-boiled eggs, peeled and halved
  • 1 medium cucumber, sliced
  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 3 medium shallots, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 2 teaspoons chile paste
  • 1 tablespoon water, or more as needed
  • 0.25 cup tamarind juice
  • 3 tablespoons white sugar
Instructions:
  • In a medium saucepan, combine coconut milk, water, rice, fresh ginger, ground ginger, bay leaf, and salt. Bring to a boil over medium heat, then simmer until tender, about 20 to 30 minutes. Remove bay leaf and keep rice warm until serving.
  • While the rice is cooking, prepare the garnish by heating 1 cup of vegetable oil in a large skillet over medium-high heat. Add peanuts and cook until lightly browned. Remove with a slotted spoon and drain on paper towels.
  • Return the skillet to the stove and stir in anchovies, cooking until crisp and golden, about 2 to 3 minutes. Use a slotted spoon to remove the anchovies and place them on paper towels to drain. Discard the remaining oil and wipe the skillet clean.
  • Prepare the sauce: Warm oil in a fresh skillet. Sauté onion, shallots, and garlic until aromatic, for 1 to 2 minutes. Incorporate chile paste and cook for 10 minutes, stirring occasionally; if the mixture seems dry, add water as necessary. Add anchovies and cook for 5 minutes. Mix in tamarind juice, sugar, and salt; let the sauce thicken by simmering for about 5 minutes.
  • Fill bowls with fluffy, warm rice. Spoon over the luscious sauce. Sprinkle with crunchy peanuts, fried anchovies, sliced hard-boiled eggs, and fresh cucumber slices.
