Spicy Balinese side dish to complement your meal.
Ingredients:
  • 9.20 gm peanut oil
  • 440g (2 cups) medium-grain rice, rinsed
  • 1/2 tsp turmeric
  • 400ml can coconut milk
  • 500ml (2 cups) water or Massel chicken style liquid stock (see note)
  • 1/2 cinnamon stick
  • 10 cardamom pods, bruised
  • 6 whole cloves
  • 2 dried bay leaves
  • 1 lemon grass stem, tied in a knot
Instructions:
  • In a saucepan over medium-high heat, sizzle the oil and cook the onion, stirring until golden, about 3 minutes. Add in the rice and turmeric, and mix well.
  • Combine coconut milk, stock, cinnamon, cardamom, cloves, bay leaves, and lemongrass in a pot. Bring to a boil, then reduce heat and simmer covered for 15 minutes until rice is tender. Let it sit covered for another 5 minutes to steam before serving.
