Garden Tomato Salsa

Fresh garden salsa with ripe tomatoes, crisp bell pepper, zesty cilantro, and spicy jalapeños mixed in a tangy lime vinaigrette.
Ingredients:
  • 0.5 sweet onion, chopped
  • 0.5 green bell pepper, coarsely chopped
  • 0.25 cup fresh cilantro
  • 5 slices pickled jalapeno peppers, or to taste
  • 6 fresh tomatoes, quartered
  • 2 teaspoons olive oil
  • 2 teaspoons red wine vinegar
  • 0.5 lime, juiced
  • 0.125 teaspoon salt
Instructions:
  • Combine onion, bell pepper, cilantro, and jalapeño peppers in a food processor and pulse until finely chopped. Add tomatoes and pulse a few times until coarsely chopped. Transfer the mixture to a bowl with a tight-fitting lid.
  • Combine olive oil, red wine vinegar, lime juice, and salt in a small bowl and whisk until the dressing is fully mixed.
  • Coat tomato mixture with dressing, mix thoroughly, then chill for a minimum of 1 hour before serving.
