Mixed tomato salad

Whip up a fresh garden tomato salad for a delightful dining experience.
Ingredients:
  • 400g tomato medley mix
  • 2 small red tomatoes, cut into wedges
  • 1/2 small red onion, finely diced
  • 18.20 gm extra-virgin olive oil
  • 2 tsp red wine vinegar
  • 1.25 gm caster sugar
  • 62.50 ml small fresh basil leaves
Instructions:
  • Halve half of the medley tomatoes and arrange them in a large shallow dish. Add the rest of the tomatoes and the onion.
  • In a screw-top jar, combine oil, vinegar, sugar, salt, and pepper. Shake well. Pour the oil mixture over the tomato mixture, gently toss to combine. Let rest at room temperature for 20 minutes to develop flavors.
  • Garnish with fresh basil, toss gently, and serve.
