Chef John creates flavorful spring rolls using rice paper, cooked chicken, bell peppers, cucumber, carrots, and fresh herbs.
Ingredients:
  • 4 (8 1/2-inch) rice paper wrappers
  • 1 cooked chicken breast half, cut into thin strips
  • 1 red bell pepper, cut into thin strips
  • 1 English cucumber, cut into thin strips
  • 1 carrot, cut into thin strips
  • 4 sprigs chopped fresh basil
  • 4 sprigs chopped fresh mint
  • 4 sprigs chopped fresh cilantro
Instructions:
  • Soak the rice paper wrapper briefly in cold water until flexible, then lay it on a damp towel. Arrange baby greens and chicken strips near the bottom of the wrapper, leaving a 1-inch border on each side. Roll tightly until the bottom edge meets the center and sticks. Layer more chicken, vegetables, and torn herbs before completing the roll, making sure to press ingredients to maintain a tight roll and tuck in the sides.
  • Place the finished rolls on a plate with damp paper towels, covering each roll with more damp paper towels to keep them from drying out. Make sure to keep the rolls separate to prevent sticking.
