Indulge in Chef John's vibrant asparagus patties, a taste of fresh spring that pairs perfectly with zesty lemon aioli or in a veggie burger.
Ingredients:
  • 1 pound fresh asparagus spears
  • salt and freshly ground black pepper to taste
  • 0.33333334326744 cup plain dried bread crumbs
  • 1 ounce finely grated Pecorino Romano cheese
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon olive oil, or as needed
Instructions:
  • Trim the woody ends off the asparagus spears; halve them if needed to fit your pot.
  • 1. Boil asparagus in generously salted water for 2 to 3 minutes until slightly tender. 2. Transfer asparagus to a bowl of ice water and let soak until cool.
  • After thoroughly draining the asparagus, finely chop it and place it in a bowl. Season with salt and pepper, then mix in bread crumbs, Pecorino Romano, and cayenne pepper. Gradually add eggs, one by one, until fully incorporated.
  • In a skillet over medium heat, heat olive oil. Spoon asparagus mixture into the skillet in batches. Press with a fork to flatten and cook until golden brown on the bottom, around 4 minutes. Flip and brown the other side for another 4 minutes. Repeat for the remaining patties.
