Creamy asparagus soup elevated with tangy yogurt, zesty lemon, and savory Parmesan cheese. Easily vegan-friendly with soy substitutes. Irresistible to all!
Ingredients:
  • 1 pound fresh asparagus
  • 0.75 cup chopped onion
  • 0.5 cup vegetable broth
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 1.25 cups vegetable broth
  • 1 cup soy milk
  • 0.5 cup yogurt
  • 1 teaspoon lemon juice
  • 0.25 cup grated Parmesan cheese
Instructions:
  • In a saucepan, combine asparagus and onion with 1/2 cup vegetable broth. Bring to a boil, then simmer until vegetables are tender.
  • Set aside a few asparagus tips for garnishing. Blend the rest of the vegetables in an electric blender until smooth.
  • In the same pan used for asparagus and onions, melt butter. Stir in flour, salt, and pepper. Cook for 2 minutes without browning. Pour in 1 1/4 cups vegetable broth and increase heat. Stir until boiling.
  • Combine the vegetable puree and milk in a saucepan, followed by whisking in yogurt and lemon juice. Heat through while stirring, then serve in bowls and top with reserved asparagus tips. Add Parmesan cheese if desired.
