Whip up a creamy asparagus soup with fresh asparagus, broth, sour cream, and a hint of lemon for a silky-smooth spring delight.
Ingredients:
  • 1 pound fresh asparagus, trimmed and cut into 1 inch pieces
  • 1 (14.5 ounce) can chicken broth, divided
  • 0.5 cup chopped onion
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 1 cup milk
  • 0.5 cup sour cream
  • 1 teaspoon fresh lemon juice
Instructions:
  • In a large saucepan, add asparagus, 1/2 cup chicken broth, and onion. Cover and bring to a boil over high heat. Simmer uncovered on medium-low heat until asparagus is tender, about 12 minutes. Blend the mixture until smooth in a blender and set aside.
  • In a single saucepan, gently melt butter over medium-low heat. Add flour, salt, and pepper, stirring continuously for 2 minutes until well combined.
  • Turn up the heat to medium and pour in the rest of the chicken broth while stirring constantly until it comes to a boil. Mix in the pureed asparagus and milk.
  • In a small bowl, mix sour cream with a ladle of hot soup until smooth. Pour the mixture back into the soup, add lemon juice, and warm through without boiling. Serve promptly.
