Light and smooth dinner soup for a cozy porch meal with neighbors.
Ingredients:
  • 1 tablespoon olive oil
  • 4 slices bacon, diced
  • 0.5 onion, diced
  • 3 cloves garlic, minced
  • 2 pounds asparagus, cut into 1 1/2-inch pieces
  • 2.5 cups chicken broth
  • 0.5 teaspoon ground black pepper
  • 1 cup heavy whipping cream
Instructions:
  • Heat up your Instant Pot using the Saute function, then drizzle some olive oil. Cook bacon in the heated oil for 2 minutes. Next, add onion and saute until soft and translucent, around 5 minutes. Mix in garlic and asparagus and cook for an additional 1 to 2 minutes.
  • Pour the chicken broth over the asparagus mixture and bring it to a boil. Switch off the Saute mode and switch to Manual mode. Lock the lid and set High pressure according to manufacturer's instructions for 5 minutes. Allow pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions and allow pressure to release naturally for 10 to 40 minutes. Unlock and remove the lid.
  • Blend asparagus mixture with an immersion blender until velvety. Stir in cream and choose Saute function. Simmer until soup is heated through, avoiding boiling. Flavor with salt and pepper to taste.
