Vibrant green cream of asparagus soup with spinach and leeks, perfect for any summer spread.
Ingredients:
  • 1 pound fresh asparagus, trimmed and peeled
  • 5 tablespoons unsalted butter, divided
  • 5 cups chicken broth, divided
  • 2 leeks, white and light green parts only, thinly sliced
  • 1 pound fresh spinach, stemmed, divided
  • 1 teaspoon white sugar
  • 2.5 tablespoons all-purpose flour
  • 0.125 teaspoon ground white pepper
  • 1 cup frozen green peas
  • 0.5 cup heavy whipping cream, or more to taste
Instructions:
  • Slice the asparagus stalks into 1-inch pieces, setting aside the tips in a bowl.
  • In a Dutch oven over medium heat, melt butter and cook leeks in chicken broth until tender, about 5 minutes. Add asparagus stalks, cover, and cook for an additional 3 minutes.
  • Pour the rest of the delicious 4 2/3 cups of chicken broth into the Dutch oven and let it come to a boil. Lower the heat and let it simmer until the asparagus is super tender, which should take about 10 to 12 minutes. Finally, toss in 2 full cups of packed spinach and the sugar. Cook until the spinach is tender, which will take approximately 5 minutes.
  • Blend soup until velvety smooth using an immersion blender.
  • In a small saucepan, melt the remaining 3 tablespoons of butter. Whisk in the flour until fully blended and cook for 1 minute.
  • Slowly incorporate the flour mixture into the pureed soup until it becomes smooth and thoroughly combined. Season the soup generously with salt and white pepper. Bring the soup to a boil, then lower the heat before gently folding in the peas. Let it simmer until the peas are just starting to soften, which should take approximately 3 minutes. Add the asparagus tips and continue to simmer until they are tender, around 5 minutes. Serve and enjoy your delicious soup!
  • Add the heavy cream to the soup and heat gently for 3 to 4 minutes without letting it come to a boil. Mix in the rest of the spinach and heat for another 3 minutes until warmed through.
