Chilled asparagus soup with caviar

Elevate your dinner party with this gourmet asparagus soup.
Ingredients:
  • 1 eschallot, finely chopped
  • 200g potato, cut into 1cm pieces
  • 1 small carrot, finely chopped
  • 1 stick celery, finely chopped
  • 500ml vegetable stock
  • 600g asparagus, trimmed, roughly chopped
  • 125ml thickened cream
  • 20.00 ml red lumpfish caviar
Instructions:
  • In a medium saucepan, combine eschallot, potato, carrot, celery, and stock. Bring to a boil, then cover and simmer for 5 minutes. Add asparagus and simmer for an additional 2 minutes.
  • Blend the soup with cream until silky smooth. Adjust seasoning to your liking. Transfer the soup to a large heatproof bowl, cover it with plastic wrap, and let it chill in the refrigerator for several hours or overnight.
  • Ladle the soup into four bowls, swirl with a touch more cream and garnish with caviar. Serve promptly.
