Healthy feta and mint beef patties with griled vegies and hummus recipe

"Prepare and freeze these juicy beef patties for up to 3 months or keep fresh in the fridge for a couple of days. Perfect for easy, healthy meal prepping!"
Ingredients:
  • 250g extra lean beef mince
  • 25g feta, crumbled
  • 2 green shallots, finely chopped
  • 40.00 ml chopped fresh mint leaves
  • 1 tsp finely grated lemon rind
  • 1 corncob, husk and silk removed, cut into 4 pieces
  • 1 bunch asparagus, trimmed
  • 1 small red capsicum, deseeded, cut into wedges
  • 40.00 ml hummus
Instructions:
  • In a bowl, combine beef, feta, shallot, mint, garlic, and lemon rind. Season well and shape into 6 patties using your hands. Transfer the patties to a large sealable glass or plastic container.
  • Combine the corn, asparagus, and capsicum in a spacious airtight container.
  • Chill the containers in the freezer for up to 3 months, or until the night before cooking. Thaw overnight in the fridge.
  • Heat up a barbecue grill or chargrill pan on high heat. Lightly coat the patties and vegetables with oil. Grill the corn for 8-10 minutes, turning occasionally. Grill the patties and capsicum for 3-4 minutes per side, and grill the asparagus for 1-2 minutes per side.
  • Plate the patties and vegetables individually. Don't forget to season them before serving alongside a generous dollop of hummus.
