Elevate your salad game with a refreshing mix of iceberg lettuce, sweet peas, and tangy feta cheese.
Ingredients:
  • 200g sugar snap peas, trimmed
  • 125.00 ml frozen peas
  • 56.88 gm olive oil
  • 42.00 gm lemon juice
  • 20.00 ml shredded fresh mint leaves
  • 1 small iceberg lettuce, roughly torn
  • 50g feta, crumbled
Instructions:
  • Bring a generous amount of water to a rapid boil. Cook sugar snap peas for 2 to 3 minutes until vibrant and tender, then add frozen peas for the final minute of cooking. Drain and then immediately refresh in a bowl of chilled water. Drain well before proceeding.
  • Combine oil, lemon juice, and mint in a screw-top jar. Season with salt and pepper, then shake well to mix. In a large bowl, combine lettuce and peas. Drizzle with the prepared dressing and toss to coat. Finish by sprinkling feta on top before serving.
