Quick and flavorful chicken dish that's both nutritious and tasty!
Ingredients:
  • Olive oil spray
  • 600g chicken breast fillets, thinly sliced
  • 48.80 gm oyster sauce
  • 42.00 gm salt-reduced soy sauce
  • 10.00 gm caster sugar
  • 1 brown onion, halved, cut into thin wedges
  • 3cm-piece fresh ginger, peeled, thinly sliced
  • 200g sugar snap peas, trimmed
  • 2 celery sticks, ends trimmed, thinly sliced diagonally
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 8 iceberg lettuce leaves
Instructions:
  • Preheat a wok or large non-stick pan over high heat, then lightly coat with olive oil spray. Cook half of the chicken until golden, about 2-3 minutes. Transfer to a plate. Repeat with the rest of the chicken, making sure to reheat the wok in between batches.
  • Combine oyster sauce, soy sauce, and sugar in a small bowl, stirring until sugar dissolves. Heat wok or frying pan over high heat, grease with olive oil spray. Stir-fry onion and ginger for 2 minutes, then add peas, celery, and capsicum, stir-frying for another 2 minutes.
  • Pour the chicken and soy sauce mixture into the pan. Stir-fry it for 1-2 minutes. Arrange the lettuce leaves on serving plates and generously spoon the stir-fry over the top to serve.
