Speedy three pea green chicken curry recipe

Quick and vibrant green chicken curry with three types of peas, ready in 30 minutes.
Ingredients:
  • Rice bran oil spray
  • 1 red onion, roughly chopped
  • 20.00 ml finely chopped washed coriander roots and stems
  • 87.50 gm green curry paste
  • 1 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 7.20 gm honey
  • 400ml can light coconut milk
  • 350g chicken breast fillets, thinly sliced
  • 250.00 ml frozen peas
  • 100g snow peas, trimmed
  • 100g sugar snap peas, trimmed
  • 6.10 gm fish sauce
  • 450g packet 2 1/2 minute microwave brown rice
  • Finely chopped coriander leaves, to serve
Instructions:
  • Begin by spraying a medium saucepan with oil and heating it over medium-high heat. Add the onion, coriander root and stems, and curry paste, then cook while stirring for 5 minutes until the onion begins to soften. Next, add the rind, juice, honey, and coconut milk and bring the mixture to a simmer.
  • Drop the chicken into the pot and let it gently simmer for 7 minutes. Then, toss in the peas during the last 4 minutes, cooking until they are vibrant and tender, and the chicken is fully cooked. Finish by stirring in the fish sauce.
  • Cook the rice according to the instructions on the packet.
  • - Portion the rice into individual serving bowls. - Ladle the flavorful curry on top of the rice. - Garnish with the fresh coriander leaves set aside earlier. - Present and enjoy your delicious meal!
