Speedy and tasty taco with beef cooked on tortilla for crispy coating. High heat prevents soggy tortilla. Easy fold chopstick indent. Use premade or homemade taco seasoning.
Ingredients:
  • 500g lean beef mince
  • 20.00 gm salt-reduced taco seasoning (see notes)
  • 6 (14cm rounds) mini flour tortillas
  • 18.20 gm olive oil
  • 155g (1 1/2 cups) pre-grated 3 cheese blend
  • 250g punnet cherry tomatoes, quartered
  • 62.50 ml chopped fresh coriander leaves
  • 2 spring onions, thinly sliced
  • 21.00 gm fresh lime juice
  • Sliced pickled jalapenos, to serve (optional)
Instructions:
  • Mix the beef mince with taco seasoning in a bowl. Divide the seasoned beef into six equal portions. Spread one portion of the beef mixture evenly over a tortilla. Use a chopstick to create a groove down the center of the meat.
  • In a large non-stick frying pan over medium-high heat, heat the oil. Place the tortilla in the pan, meat-side down, and cook until golden, about 2-3 minutes. Flip the tortilla and sprinkle 1/4 cup of cheese on top. Cook until the tortilla is crisp and the cheese has melted, about 1-2 minutes. Repeat with the rest of the tortillas, beef mixture, and cheese.
  • In a bowl, mix together the tomatoes, coriander, onions, and lime juice. Season with your favorite spices.
  • Spread the tomato salsa and jalapenos, if desired, over the tortillas. Serve and enjoy!
