"Create irresistible smash burgers by pressing patties onto a hot grill for crispy edges and juicy meat."
Ingredients:
  • 4 hamburger buns
  • 2 tablespoons butter, softened, or as needed
  • 1 pound ground chuck beef (80% lean)
  • 4 6-inch squares parchment paper
  • 4 slices American cheese
  • burger toppings of choice
Instructions:
  • Preheat a well-oiled outdoor grill to high heat. Place a cast iron flat-top griddle or large cast iron skillet on the grill until it starts smoking.
  • Coat the buns with butter and toast them on the flat-top until golden brown. Keep aside.
  • Gently shape the meat into 8 balls, each weighing 2 ounces. Avoid compacting the meat too much to ensure proper smashing. Transfer each ball onto the hot flat-top, covering with a piece of parchment paper to prevent sticking. Use 2 firm spatulas in a criss-cross motion to smash each ball to a 1/4 inch thickness. Alternatively, use the bottom of a small skillet. Sprinkle salt over the smashed meat.
  • Grill the patties until the edges are dark brown and the centers are a light pink color, about 45 seconds. Using a bench scraper or firm spatula, gently flip the patties over, immediately cover 4 of them with cheese, and grill for an additional 15 to 20 seconds. Stack the plain patties over the cheese-covered ones to create 4 stacks. Transfer each stack to a bun and serve with your favorite toppings.
