Easily make fun and delicious restaurant-style smash burgers at home.
Ingredients:
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
  • 0.5 tablespoon sweet pickle relish
  • 1 teaspoon vinegar
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon granulated garlic
  • salt and freshly ground black pepper to taste
  • 1 pound ground beef, at least 20% fat, refrigerated until cold
  • 4 hamburger buns, split
  • 1 tablespoon butter, or as needed
  • 4 slices Cheddar or Colby cheese
  • 0.5 small red onion, sliced
Instructions:
  • Combine ketchup, mayonnaise, pickle relish, vinegar, white sugar, and garlic in a small bowl. Add salt and black pepper to taste. Cover and let flavors mingle.
  • Divide the ground beef into 4 equal portions and shape them into balls; chill. Spread butter on the cut sides of each hamburger bun.
  • Preheat a spacious skillet - either cast iron or nonstick - over medium-high heat. Optionally, drizzle a touch of vegetable oil to prevent sticking.
  • Place two hamburger balls into the skillet and gently press them flat using either the bottom of a small sauce pot or a spatula. Hold them down until they are seared, which should take about 1 minute. Season with salt and pepper. Continue cooking until a good crust forms, then flip them over.
  • Once the patties are almost cooked, add a slice of cheese on top. Push the patties to the side and toast the buns, butter side down, in the skillet. Keep cooking the burgers until the cheese is melted and the meat is no longer pink in the center, approximately 5 minutes. Use an instant-read thermometer to ensure the center reaches at least 160°F (70°C).
  • Transfer the buns to a plate. Place a patty on each bottom bun. Spread the special sauce on the toasted side of the top bun.
  • Place a handful of onions on top of the patty, place the top bun over them, and savor every delicious bite!
