Speedy chicken tortilla bowls recipe

Transform family Mexican night with quick and easy chicken tortilla bowls.
Ingredients:
  • 4 Tortilla Wraps
  • 2 x 250g pkts Mexican-style microwavable rice
  • 375.00 ml shredded Roast Chicken
  • 60ml salsa
  • 40g Baby Rocket
Instructions:
  • 1. Preheat oven to 200°C. 2. Place 4 upturned 9cm round ramekins or ovenproof dishes on a baking tray. 3. Arrange tortillas over the ramekins, securing with kitchen string. 4. Bake for 10 mins until golden brown. 5. Let cool for 5 mins - they will crisp up. 6. Remove string and ramekins from tortilla bowls.
  • While the rice is cooking, prepare it according to the instructions on the packet.
  • Plate the tortilla bowls and fill each with rice. Season to taste and garnish with chicken, salsa, and baby rocket before serving.
