Smoked chicken, watercress & sugar snap pea salad

Spring vegetable salad with crunchy peas and delicate watercress - a light and elegant starter.
Ingredients:
  • 250g sugar snap peas, topped
  • 75g (1/4 cup) light sour cream
  • 31.50 gm fresh lemon juice
  • 7.20 gm honey
  • 20.00 ml chopped fresh chives
  • 300g smoked chicken breast, skin removed, thinly sliced
  • 750.00 ml watercress sprigs, washed, dried
Instructions:
  • Blanch sugar snap peas in salted boiling water for 2-3 minutes until vibrant green and crisp-tender. Shock in cold water, then drain thoroughly.
  • Whisk together sour cream, lemon juice, honey, and chives in a small bowl using a balloon whisk until smooth. Add hot water if desired. Season with salt and pepper.
  • Combine sugar snap peas, chicken, watercress, and onion in a large bowl. Season with salt and pepper, then gently toss to mix.
  • Serve the salad on individual plates, drizzle with dressing, and enjoy right away.
