Elevate your rolls with homemade creamy mayonnaise for an irresistible flavor upgrade.
Ingredients:
  • 4 large oval bread rolls
  • 50g watercress, washed, dried, sprigs picked
  • 1 x 350g pkt smoked chicken breast, thinly sliced
  • 2 ripe tomatoes, thinly sliced
  • 3 egg yolks
  • 2 tsp white wine vinegar
  • 5.90 gm Dijon mustard
  • Salt & ground white pepper
  • 300ml olive oil
Instructions:
  • For the mayonnaise, combine egg yolks, vinegar, mustard, salt, and pepper in a medium bowl. Use an electric beater to whisk until foamy. Slowly add a few drops of oil at a time, whisking continuously until the mixture thickens. Keep adding oil tablespoon by tablespoon, whisking well each time, until the mayonnaise is thick and shiny. For a thinner consistency, slowly whisk in 1-2 tablespoons of boiling water.
  • Cover the mayonnaise with plastic wrap directly touching its surface and refrigerate until ready to use.
  • Slice each bread roll lengthways without cutting all the way through. Spread mayo inside the rolls, then layer with watercress, chicken, and tomato. Arrange on a platter and serve right away.
