Chicken and lime mayonnaise baguettes

Spice up summer baguettes with tangy lime mayo.
Ingredients:
  • 1.5L (6 cups) cold water
  • 5cm piece fresh ginger, peeled, thinly sliced
  • 6 fresh makrut lime leaves, torn
  • 4 (about 800g) single chicken breast fillets
  • 1 bunch fresh coriander, leaves picked
  • 200g watercress, stems trimmed, washed, dried, sprigs picked
  • 100g bean sprouts
  • 6 fresh makrut lime leaves, extra, veins removed, finely shredded
  • Salt & ground white pepper
  • 2 30cm baguettes (French sticks)
  • 125g (1/2 cup) good-quality whole-egg mayonnaise
  • 42.00 gm fresh lime juice
Instructions:
  • In a large deep frying pan, combine water, ginger, and makrut lime leaves. Bring to a gentle simmer over medium heat. Add chicken, reduce heat to low, cover, and poach for 20 minutes until chicken is cooked through. With a slotted spoon, transfer chicken to a large bowl and let it rest for 15 minutes until cool enough to handle.
  • Combine coriander, watercress, bean sprouts, and extra lime leaves in a large bowl for a refreshing and vibrant mix of flavors.
  • Prepare the zesty lime mayonnaise by whisking together mayonnaise, fresh lime juice, and minced garlic until smooth and well combined.
  • Finely shred the chicken using your fingers and mix it into the lime mayonnaise. Gently toss until well combined. Season with salt and pepper to taste.
  • Cut each baguette into thirds crossways using a serrated knife. Make a lengthways cut on the side of each piece without cutting through. Fill the baguette pieces with the chicken and watercress mixtures. Serve promptly.
