Elevate classic chicken mayo sandwiches with a gourmet touch.
Ingredients:
  • 123.75 gm whole-egg mayonnaise
  • 2 small limes, rind finely grated, juiced
  • 8 chicken thigh fillets, trimmed
  • 90.75 gm sweet chilli sauce
  • 1 garlic clove, crushed
  • olive oil cooking spray
  • 2 red onions, thinly sliced
  • 8 slices sourdough bread, each 1cm thick
  • 100g baby spinach
  • 2 ripe avocados, peeled, sliced
Instructions:
  • In a small bowl, mix together mayonnaise, lime zest, 1 tablespoon lime juice, salt, and pepper. Chill in the refrigerator until needed.
  • Sandwich the chicken between baking paper and gently flatten to 1cm thickness with a meat mallet. Mix sweet chili, garlic, and 2 tablespoons of lime juice in a shallow ceramic dish. Add the chicken, ensuring it's coated well, then cover and chill in the fridge for 30 minutes.
  • Prepare a chargrill pan by giving it a light spray of oil and heat it up on high. Add the onions and give them a quick spray of oil. Cook while stirring occasionally for 5 minutes until they are just soft. Then transfer the onions to a plate and cover to keep warm.
  • Place the pan back on the heat and sear the chicken for 2 to 3 minutes on each side until perfectly cooked. Then, move the chicken to a plate and cover it to maintain its warmth.
  • Toast the bread until it reaches a beautiful golden hue. Arrange it on plates and generously layer with spinach, avocado, chicken, onion, and zesty lime mayonnaise. Season with a pinch of salt and a sprinkle of freshly ground pepper. Serve with lime wedges on the side.
