Spicy lime chicken - juicy and flavorful.
Ingredients:
  • 150g butter
  • 4 makrut lime leaves, finely shredded
  • 2 limes, rind finely grated
  • 1 fresh chilli, chopped
  • 1 stalk lemon grass, white part, finely chopped
  • 4 chicken Marylands
  • Sea salt & freshly ground pepper
  • 1kg parsnips, peeled, cut into chunks
  • 80ml milk
  • Peas, to serve
  • Fresh mint leaves, to serve
Instructions:
  • Preheat your oven to 200°C. In a large mixing bowl, combine 100g of room temperature butter, 4 finely shredded makrut lime leaves, finely grated rind of 2 limes, chopped fresh chili, and finely chopped white part of 1 lemongrass stalk.
  • Gently tuck the butter under the skin of 4 chicken Marylands, then lay them on a baking tray and generously season with sea salt and freshly ground pepper. Bake until golden and fully cooked, about 35-40 minutes.
  • While waiting, boil 1kg of parsnips that have been peeled and cut into chunks until they are tender in a saucepan. Then, drain and mash them with 50g of butter and 1/3 cup (80ml) of milk. Serve the mashed parsnips with the chicken and cooked peas mixed with fresh mint leaves.
