Elevate your weeknights with zesty low-carb Cajun chicken.
Ingredients:
  • 4 small (180g each) chicken breast fillets
  • 10.00 gm sweet paprika
  • Pinch of cayenne pepper
  • 1 avocado, flesh cubed
  • 42.00 gm lime juice
  • 1 long green chilli, seeds removed, thinly sliced lengthways
  • 40.00 ml freshly snipped chives
  • 250g steamed green beans
Instructions:
  • Slice each chicken breast into 3 thin escalopes, then coat lightly with the mixture of paprika and cayenne. Set aside. In a bowl, combine avocado, lime, chili, and chives. Season with salt and pepper, then gently stir to combine. Set aside.
  • Preheat a large frypan over high heat and lightly coat with oil. Sear the chicken in two batches for 2 minutes on each side until fully cooked. Let it rest for 3 minutes, then slice each piece diagonally. Serve the chicken on a bed of beans and salsa, and drizzle with the pan juices before serving.
