Use a store-bought roast chicken to whip up a scrumptious summer pasta in no time.
Ingredients:
  • 350g dried mini penne rigate pasta
  • 56.88 gm olive oil
  • 2 small red chillies, deseeded, finely sliced
  • 2 garlic cloves, finely chopped
  • 4 green onions, thinly sliced
  • 750.00 ml cooked shredded chicken (see tip)
  • 1 tsp finely-grated lime rind
  • 42.00 gm lime juice
  • 62.50 ml chopped fresh coriander leaves
Instructions:
  • Cook the pasta in a large saucepan of boiling water according to the packet instructions until tender. Drain the cooked pasta.
  • Heat oil in a large frying pan over medium-high heat. Sauté chilli, garlic, and green onions for 1 minute. Reduce heat to low, then add chicken, lime rind, lime juice, and pasta. Season with salt and pepper. Simmer for 4 to 5 minutes until heated through. Remove from heat, stir in coriander, and toss well. Serve and enjoy!
