Fresh basil hummus with a summer twist.
Ingredients:
  • 0.33333334326744 cup firmly packed fresh basil leaves
  • 4 cloves garlic, chopped
  • 1 tablespoon lemon juice, or to taste
  • 3 tablespoons olive oil, divided
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (15 ounce) can white beans, drained
Instructions:
  • 1. Bring a sizeable pot of water to a boil, swiftly add the basil, and cook uncovered until vibrant green, approximately 20 seconds. Then, promptly immerse the basil in ice water until chilled. Squeeze gently to remove excess water and pat dry with a paper towel.
  • In a blender, combine basil, garlic, lemon juice, 1 tablespoon of olive oil, garbanzo beans, white beans, salt, and black pepper. Blend until nearly smooth, then add the remaining 2 tablespoons of olive oil and blend until smooth.
